Valencian Cuisine
Valencia is known as the city of paella. Paella is cooked in a large pan over a wood fire. There are two main paella dishes, paella Valenciana (Spanish rice with chicken and/or rabbit) and paella marinera Spanish rice cooked with a variety of seafood.
But Valencia has a lot more than only paella. A few more dishes that are worth a try are:
Arroz a banda, rice dish stewed in fish stock
Arroz negra, rice dish with squid cooked in its own ink, giving it a black colour (hence the name)
Arroz al horno, baked rice dish with beans, sausage, vegetables and potatoes
Arroz con costra, rice dish covered with a baked egg crust
Fideau, same as paella, but with noodles instead of rice
All i pebre, eels fried in oil, bell pepper, and garlic
Grilled fresh vegetables, brushed with oil and garlic
Salmueras and salazones, dried salted fish and roe
Olleta, pork stew
